Review of Trader Joe's Greens with Envy: An Organic Mix of Green Vegetables

A fairly recent find from Trader Joe's that I've been enjoying over the past few months is a side dish called 'Greens with Envy'.

Trader Joe's Greens with Envy is a mix of green vegetables including organic shelled edamame, organic spinach, organic green beans, organic broccoli florets, and organic asparagus tips.

I had been looking for green vegetables to have on hand, something different than the usual canned green beans or frozen broccoli to get through the winter months when fresh vegetables are not always as tasty as they are when they're in season.

I came across Trader Joe's Organic Greens with Envy vegetable medley in their frozen food vegetable section. I love that they are low in calories, yet somewhat high in fiber and protein.

I found some clever uses for this organic mix of green vegetables to sneak it into my families diet. One quick and simple dish I've found to make, especially when serving just one or two, or to use as a side dish to salmon, is to boil a small amount of pasta and throw a handful of the rinsed Greens with Envy vegetable mix in the water with the pasta when the pasta is near done. The hot water par boils the greens long enough to cook them and allow them to be served mixed in with the pasta once its drained. I usually add a little Italian dressing to mix in and coat the combination, and it can then be served hot or cold for a delicious side dish or light lunch.

Another way I've found to use Trader Joe's Organic Greens with Envy frozen vegetable mix is to cook a handful of it in the pot with rice you are preparing. Choose brown rice for an extra health benefit and boil the combination in chicken broth to add extra flavor.
This also makes a healthy warm side dish for chicken or fish.

Most recently, I added Trader Joe's Organic Green with Envy vegetable medley side dish to my spaghetti sauce, along with some finely chopped leftover baked potatoes.

When my daughter was little I'd carefully cut up green beans into very fine pieces to hide in the spaghetti sauce and insure she'd eat her vegetables. As she got older, I was pleased to learn that she really loved green beans, but it was difficult introducing other vegetables to her diet.

My daughter likes green beans, as well as broccoli, and because these are in Trader Joe's Organic Green with Envy frozen vegetable mix she will willingly eat the edamame, spinach, and asparagus tips that are included.

Nutritional Facts on Trader Joe's Organic Greens with Envy Vegetable Medley

A serving size of Trader Joe's Vegetable Organic Greens with Envy is 90 grams or 1/5 of the 16oz bag they come in. So, yes, there are roughly 5 servings per bag. Each serving has 60 calories, only 1.5 of which come from fat. There's no Tans Fat or cholesterol. There are 30mg of sodium, or 1% of daily values based on a 2,000 calorie a day diet, and 7g total carbohydrates. Trader Joe's Organic Greens with Envy vegetable medley has 3g of dietary fiber and 5g of protein. It's high in vitamin A at 50% of daily values. A serving of the vegetable mix has 40% vitamin C, 6% calcium, and 10% iron.

Other Ideas for Trader Joe's Organic Greens with Envy Vegetable Medley

These quick-frozen greens cook up crisp and tender making them excellent for stir-frying as well. I haven't done it yet, but I'm thinking this vegetable mix would be great to mix in with tuna salad to have in place of lettuce on a sandwich at lunchtime. I guess the possibilities could be endless!

    I agree with JRS. TJ's Organic Greens With Envy is a great vegetable medley. My favorite recipe is quite similar in that I add it to pasta noodles (as they're almost done boiling) and add pesto. Quick and tasty meal.
