Christmas is just around the corner. It will soon be time to hang the mistletoe and trim the tree. It is never to early to start thinking of what to prepare for that perfect Christmas dinner. Roast beef is an excellent choice that is sure to please everyone at your dining table.
Savory Golden Mushroom Beef Roast
Ingredients:
1 4 to 6 pound beef roast (any choice of cut)
1 large onion
1 lb. carrots
5 medium potatoes
3 stalks of celery
¾ cup of sliced shiitake mushrooms
6 slices bacon (fried crispy and cut into bite size pieces)
3 cans of Campbell's golden mushroom soup
fresh parsley (for garnish)
1 cup water
salt and pepper (to taste)
Pre-heat oven to 350 degrees.
Wash and pat dry your beef roast. Place the beef roast in dutch oven or large baking dish (one that has a lid), sprinkle with salt and pepper, pour the water in the pan with the beef roast, cover with the lid and bake for 1 ½ hours.
While the roast is baking, prepare the vegetables. Peel and wash the onions and cut into bite size pieces. Wash and peel the carrots and cut into 1 inch pieces. Peel and wash the potatoes, quarter, then cut into 1 inch pieces. Wash celery and cut into bite size pieces.
Remove the beef roast from the oven, after the 1 and ½ hour baking time. Leave any juices that are left in the pan. Place the prepared vegetables, bacon and shiitake mushrooms evenly around the beef roast. Pour the Campbell's soup over the top of the beef roast and vegetables. Replace the lid and put the beef roast back in the oven and cook for an additional 1 ½ hours, or until the internal temperature of the roast reaches 160 degrees on your meat thermometer.
Remove the beef roast from the oven. Place the roast on a serving platter and remove the vegetables from the gravy with a slotted spoon. Arrange the vegetables around the outer edges of the beef roast on the platter. Drizzle the gravy over the top of the beef roast. Garnish with fresh parsley. Pour any remaining gravy into a gravy boat, to serve with the meal.
Seasoned green beans and your favorite dinner rolls are a wonderful accompaniment for this perfect roast beef dinner for Christmas.
This meal may be prepared the day before, and refrigerated and served the next day. The flavors blend and this Christmas roast beef will taste even better. Just pop it in the oven and heat.
