Ingredients

Serves 5
1LB Beef tenderloin, center cut and trimmed
1 TBSP Tarragon leaves, chopped or minced
1/4 cup Dijon mustard
3 cups Veal stock
1 TBSP Olive oil
1/2 cup Sherry wine
1 Garlic clove, chopped or minced
1 tsp Salt and pepper to taste

Preheat oven to 450 degrees and oil a shallow baking dish. Once oiled place in the beef tenderloin. In a bowl combine Dijon mustard, oil, and garlic and spread over tenderloin. Sprinkle salt and pepper to taste. Bake about 30 minutes or until 130 degrees with a thermometer.

Bring Sherry and veal stock to boil and add salt and pepper to taste and set aside. Take beef tenderloin from oven and place on chopping board. Wrap tenderloin loosely with foil. Let set for 15 minutes before slicing. Mix veal sauce with tarragon and serve over beef tenderloin.
Tip
Add or delete any ingredients for your desires. Green peppers are nice to add instead of garlic.

    sounds meaty! ha lol, great recipe! I'm still not able to publish a recipe I claimed, it keeps sending me to a blank page with a bunch of html from what I've typed in already...weird, and I can't get past it to get it published...aarrg! hopefully all the bugs will be fixed soon!
