Ingredients

Serves 6
1 lb each 3 Rock Cornish hens
1 cup Seasoned croutons
1/4 cup Olives, black and green
1/4 cup Raisins
1/4 cup Lemon Juice
1 tablespoon Olive Oil
2 cloves Garlic
1/4 cup Fresh parsley leaves, chopped
1 teaspoon Fresh thyme leaves, chopped
1/4 teaspoon Sea salt
1/4 teaspoon Black pepper, freshly ground

Directions for Roasted Herbed Cornish Hens

Heat oven to 350 degrees.

Mix croutons, olives, raisins, half the parsley and half the thyme.

Stuff each hen loosely with one third of the stuffing.

Place hens breast sides up in a shallow baking pan.

Whisk remaining ingredients together and pour over hens.

Roast uncovered. Baste hens with lemon mixture every 20 minutes until golden brown. Allow hens to cook approximately 2 hours or until done.

Remove from oven and let rest 5 minutes.

Cut hens into halves along backbone from tail to neck.

Place on serving platter with sprigs of fresh parsley and thyme. Serve.
