5 Steps to a Healthy, and Spicy Halloween Treat

Summer has turned to fall, and Halloween's just around the corner! Halloween means pumpkins and pumpkins mean pumpkin pie, and pumpkin seeds. Instead of throwing away your pumpkin seeds after you carve your Jack 'O Lantern, make them into Roasted Spiced Pumpkin Seeds which are a quick and easy fall snack.

Pumpkin seeds, whether fished out of your pumpkin or store-bought are just as healthy as they are tasty. They are equally a great addition to the top of a sundae or brittle or with a fall salad. Here are five easy steps to making great Roasted Pumpkin Seeds.

Spiced Roasted Pumpkin Seed Recipe

- 2 cups pumpkin seeds (store-bought or pulled from the pumpkin)
- 1/4 c. water
- 3 T of light brown sugar
- 1 T pumpkin pie spice
- Pinch of salt

Preheat your oven to 350 degrees F.

1. Combine water, brown sugar, pumpkin pie spice, and your pinch of salt in a medium sauce pan.

2. Simmer the mixture over low heat, stir until sugar is dissolved.

3. Add your pumpkin seeds and cook for about five minutes, stirring about once a minute. Drain the seeds on a paper towel and place them on a baking sheet to cool.

4. Bake the seeds for 10-15 minutes, half way through, mix them around on sheet. Do this by stirring. Remove when crisp.

5. Drain them and let them cool on another paper towel.

* Store the pumpkin seeds in an air tight plastic container until you are ready to use them.
