This frittata is FABULOUS!
You can serve it warm right out of the oven or cooled with a small salad.
Preheat Oven to 375
Olive Oil
Garlic (3 cloves)
Shallots (or onion) (1/4 cup)
A handful of fresh basil
3/4 cup of roasted tomato's (get the juicy ones packed in oil -not the dried up ones)
6-8 ounces of Boursin Cheese
2 cups of fresh spinach
1/4 cup of roasted peppers (drained)
8 -10 eggs
I cup of day old peasant bread cut into chunks
Use a medium to large cast iron pan (or another kind that can go into the oven)
- Drizzle olive oil in the pan - you want a light covering
- Heat it up - just warming it
- Once it is warm add garlic and shallots (onions) if you like garlic add three finely chopped cloves (if you are not a fan of garlic do not add any or add just a small amount - remember you are the cook - you make all the final decisions)
- Same thing goes for the shallots
- Cook until the garlic and shallots are soft
- Add the chopped spinach - two cups sounds like a lot but it will cook down - you will be surprised at how little spinach you have once it is cooked
Remove the pan from the stove topAdd
- the roasted pepper ( remember this should be DRAINED and DRIED)
- Add the eggs ( which you have previously cracked into a separate bowl and whisked together - the separate bowl in important - on the rare occasion you may get a bad egg keeping them in a separate bowl will save the rest of your dish)
- Add the basil which you have torn and NOT CHOPPED - always tear fresh basil it allows the basil to release it's fragrance and prevents bruising and discoloration (if you do not have fresh basil throw in a few small handfuls of dried basil (you can also use different herbs - remember the number one rule of cooking - YOU ARE THE COOK - recipes are like guidebooks - suggestions - cook what you like - do not be afraid to experiment - enjoy the experience)
- Add the bread - the bread adds texture and flavor ( try a roasted garlic bread with this - YUMMY)
- Using a spatula - you do not want to use a fork or anything sharp - stir your ingredients together
- Now add that fabulous boursin cheese - add it is pieces - to ensure even distribution of the cheese you may want to add it one piece at a time - this will take a few extra minutes but it will be worth it - trust me on this one
Let is sit for 10 minutes and serve
