Set the Mood - Light a Fire - Chill a bottle of wine
Create this wonderful meal just enough for two. Leave room for romance during this Holiday Season. Spend time with someone you Love. The menu is simple.
Salmon Fillets broiled over Creamed Spinach
Roasted Sweet Potato Fries
Hummus with Warm Pita Triangles
Bananas Foster with Caramel Sauce and Ice Cream
*Broiled Salmon:
2- 6-8 oz Salmon Fillets
1 box frozen chopped spinach, thawed and drained
1 brick cream cheese
Old Bay Seasoning
1/2 c. Shredded Parmesan cheese
Sea Salt & Black Pepper
1 lemon-juice and zest
Olive Oil for drizzling
Sprinkle salmon with Old Bay, sea salt and lemon zest both sides, drizzle with olive oil and juice from 1/2 lemon, set aside. Combine spinach, cream cheese, 1 tsp sea salt into small saucepan over medium-low heat until well blended. Add splash of wine or liquid if mixture seems too thick. Add 1/4 c. parmesan, stir and heat through. Divide creamed spinach into 2 medium ramekins,divide remaining parmesan cheese on top of spinach then top with salmon. Broil on high 8 inches from heat. Squeeze remaining lemon over salmon to keep it moist. Turn salmon over and cook through about 6 more minutes.
*Sweet Potato Fries
2 medium sweet potatoes cut into fries
Toss potatoes with 1/2 tsp sea salt and pepper,1/8 tsp cinnamon, dash nutmeg and enough olive oil to coat fries well. Bake at 350 degrees until done. About 15-20 minutes
*Hummus and Pita Triangles
1 can garbonzo beans
juice 1 lemon
1 garlic clove minced
1/2 tsp sea salt
1 tsp tahini sauce
Olive oil-1/4 cup
Put all ingredients into food processor except olive oil. Turn on high and process until smooth. Drizzle olive oil through top of processor until smooth. Heat store bought pita and cut into triangles. Serve with tomato wedge, peppercinis, feta cheese and kalamata olives.
*Bananas Foster with caramel sauce and vanilla ice cream
1 banana cut lengthwise
juice of one lemon and orange
1/4 packed brown sugar
4 tbls real butter
2 oz regular or flavored vodka
Heat butter in a large skillet until melted, add brown sugar and stir until melted. Add bananas and cook for 3-4 minutes stirring mixture and turning bananas over to cook both sides. Pour vodka into skillet and light with long safe lighter igniting the alcohol. Pour the lemon and orange juice into the flame to put it out. Let mixture and bananas cook 3-4 minutes longer and sauce thickens. Lay 1/2 the banana in ice cream bowl,top with vanilla ice cream and sauce. Serve immediately. Enjoy!
