1 lb. ground beef (browned)
Olive oil
½ med onion
½ pepper (red, yellow, orange)
1 tsp. minced garlic
2 tbsp. chili powder (add more/less according to your preference)
¼ tbsp. cayenne (red pepper)
¼ tbsp. crushed red pepper
½ tbsp. paprika
2 tbsp. BBQ sauce
2 cans (28 oz) petite diced tomatoes
2 cans (15 oz) tomato sauce
2 cans (15 oz) black beans
2 cans (15 oz) chili beans (with Chili sauce is ok-extra zing)
1 tsp. mustard &/or ½ tsp mustard powder
Process:
Brown your ground beef in a skillet. In the large sauce pot sautee' onions, pepper and garlic in olive oil, 10 minutes. Add browned ground beef. Add spices and BBQ sauce. Add tomatoes and tomato sauce. Add mustard & mustard powder. Simmer on med for 15- 20 minutes. Add canned beans, cook an additional 5 - 10 minutes and serve hot. The pot will be full.
Serve topped with cheese and with Tostitos. ENJOY!
