Sage, Potato and Mushroom Breakfast

One day I had a craving for the loaded breakfast potatoes served at a little place called Tucker's Diner. Tucker's was miles away, and I was pretty hungry, so I made up my own version. They're great for breakfast with a side of toast. Eggs optional.

Ingredients

Serves 2
2 large Potatoes
8 ounce pkg pre-sliced Sliced mushrooms
1/4 C Sweet onions
1/4 C Green peppers
1 T Ground Sage
1 clove Garlic
1/4 C Shredded Cheese (Mozzarella or Cheddar)
2 T Oil
2 t Butter or margarine

Precook your potatoes.
For more fiber, slice your potatoes with the skin on. If you're not a potato skin lover, by all means peel your potatoes before you slice.

To lower your preparation time, partially cook your potatoes before frying. Place sliced potatoes and a little water in a microwave-safe bowl. Microwave on high for about 10 minutes.

Cook mushrooms, onions, green peppers and garlic.
While your potatoes are cooking in the microwave, heat 1 T of oil in a skillet.

Add mushrooms, chopped veggies and garlic.

Toss in a teaspoon of butter or margarine. This will add a bit of flavor and help them to brown.

Cook mushrooms until brown. Remove them from heat and put them in a dish to the side.

Finish cooking potatoes.
Place your potatoes in the same hot skillet.

Add a bit more oil and margarine if you need it. Toss potatoes to keep them from sticking to the frying pan.

When potatoes are just about done, perhaps another 10 minutes, add the cooked mushrooms.

Add sage, mix everything together and continue cooking until potatoes are the tenderness you prefer.

Sprinkle on the cheese of your choice and serve potatoes hot with toast or with your favorite eggs.

Tip
Slice your potatoes, and cut up your green peppers, onions and garlic before you start cooking. Cooking goes smoothly when everything is ready to go.
