Salad Recipes with Grapes

Although grapes are a wonderful treat to eat by themselves, here are two salad recipes that call for grapes. The first is a fruit salad with grapes, strawberries and pineapples with a sour cream and honey dressing. The second one is a chicken salad with grapes and other ingredients with a sour cream and mayonnaise dressing.

Fruit Salad with Grapes

1 Cup Fresh Seedless White Grapes
1 Cup Fresh Seedless Red Grapes
1 Cup Fresh Strawberries, Cut in Halves
1 20 ounce can Dole Pineapple Chunks, Drained
1/2 Cup Sour Cream
2 Tablespoons Honey
1 Tablespoon Brown Sugar
1 Tablespoon Fresh Orange Juice

Mix together the grapes, strawberries and pineapple in a large bowl. In a separate bowl, blend together the sour cream, honey, brown sugar and orange juice. Add this mixture, the dressing, to the fruit mixture and gently toss until all the fruit is covered. Cover and chill in the refrigerator one hour before serving. This fruit salad with grapes recipe makes about six servings.

Chicken Salad with Grapes

3 Cups Chicken, Cooked and Diced
1 Cup Fresh Seedless White or Red Grapes
1 Cups Celery, Diced
1/2 Cup Red Onion, Diced
1/2 Cup Almonds or Walnuts, Sliced
1/2 Cup Sour Cream
1/2 Cup Mayonnaise
1/2 Clove Garlic, Finely Minced
! Tablespoon White Wine Vinegar
1 Tablespoon Fresh Orange Juice
1 Tablespoon Canola or Vegetable Oil
1 Teaspoon Sugar

Mix together the chicken, grapes, celery, onion and nuts in a large bowl. In a separate bowl, blend together the sour cream, mayonnaise, vinegar, orange juice, oil and sugar. Add this mixture, the dressing, to the chicken mixture and gently toss until everything is covered. Cover and chill in refrigerator one hour before serving. This chicken salad with grapes recipe makes about six servings.
