A Robust and Filling Homemade Stuffing

Sally's Delicious Vegetarian Thanksgiving Stuffing

4 heaping c. bread crumbs, cubed (I use at least 2 different whole grain breads like a 7-grain and a whole wheat, one a little heartier, the other more lightweight... or whatever you have on hand)

1 1/2 c. apples, diced ( I use a tart-ish one and a
less tart-ish one together, if I can)

1 c. fresh cranberries, chopped

1 c. celery chopped

bunch of scallions, chopped

1/2 c. roasted wheatgerm

1 TBSP vegetable oil

1 (or 1 1/2) TBSP soy sauce

1 TBSP dried parsley

1 (or 2) tsp dried thyme

1/4 tsp dried sage (leave it out if you hate sage)

boiling water

Just put the 1st 6 ingredients in a big bowl and mix them up.
Gently drizzle the oil over everything to coat. Same with the soy sauce.
Then add the dried herbs (which are essential for a yummy taste) and stir everything up.
Slowly add & stir in boiling water until you get a good consistency: all the bread moist but not soggy.

Put it all into a lightly oiled casserole dish.

Bake covered at 350 for approx. 30 minutes

Then remove cover and let bake uncovered, turning
ingredients about every 10 minutes or so until all the
bread is lightly browned (20 - 30 minutes uncovered)

Let it cool for a few minutes, then serve and enjoy!
