Caramel Nut Cookies
½ cup shorting (part butter)
1 cup brown sugar (packed)
1 egg
½ teaspoon vanilla
13/4 cups flour
¼ tsp. baking soda
1 cup finely chopped nuts
Mix shortening, sugar, eggs and vanilla thoroughly. Mix flour, salt, and soda. Stir together with other ingredients stir well. Blend nuts. Form into two rolls, 2 inches in diameter, wrap in wax paper or plastic wrap and chill overnight. Heat oven to 400 degrees, cut slices 1/8 inch thick; place on ungreased baking sheet. Bake 8 to 10 minutes, until set but not hard. Makes 6 dozen cookies.
