Santa Will Love This Caramel Nut Cookie

A Delicious Nutty Caramel Cookie Recipe for Your Family

A delicious cookie with a light caramel flavor. This cookie recipe is easy to make and the dough can be made anytime and stored in the refrigerator until your are ready to bake them. You can bake them all at once or slice and bake a few at a time. Serve with coffee, tea or hot chocolate.

Caramel Nut Cookies

½ cup shorting (part butter)

1 cup brown sugar (packed)

1 egg

½ teaspoon vanilla

13/4 cups flour

¼ tsp. baking soda

1 cup finely chopped nuts

Mix shortening, sugar, eggs and vanilla thoroughly. Mix flour, salt, and soda. Stir together with other ingredients stir well. Blend nuts. Form into two rolls, 2 inches in diameter, wrap in wax paper or plastic wrap and chill overnight. Heat oven to 400 degrees, cut slices 1/8 inch thick; place on ungreased baking sheet. Bake 8 to 10 minutes, until set but not hard. Makes 6 dozen cookies.
