Ingredients

Serves 14
3 cups quick or instant oats
1 1/2 cups flour (whole wheat or all purpose)
1/2 cup raisins
1/2 cup walnuts - finely chopped
2 1/2 cups brown sugar
2 eggs
1 cup butter
1 tsp lemon peel - grated
1 tsp orange peel - grated
2 tbsp vanilla
1 tsp baking soda
1 tbsp cinnamon - powdered
1 tsp nutmeg - grated
2 tbsp honey

Directions for Santa's Oatmeal Cookies

Mix All Ingredients Into A Dough
Mix all the ingredients in a large bowl and knead into a dough.

Form 2 Logs
Divide the dough into 2 equal parts and roll into 2 logs about 2" in diameter.

Freeze Logs
Wrap each log in plastic wrap and freeze until hard. Depending on your freezer this should take 1 1/2 - 2 hours.

Slice and Bake in Pre-Heated 350 Degree Oven For About 10 Minutes
Slice logs into thin slices about 1/16" to 1/8" thick. Place on a lightly greased or non-stick cookie sheet and bake in a pre=heated 350 degree oven for 10 minutes. This recipe should yield about 100 cookies
