18 ounces Bulk Sausage (ground)
1 box Hot Roll Mix
1 1/4 cups Hot water (120 to 130 degrees F)
3 tablespoons Extra Virgin Olive Oil
2 cups Cheddar Cheese, shredded
Small amount Cooking Spray

Oven Preparation
Preheat the oven to 350 degrees F.

Prepare Sausage Roll Dough
Follow the pizza dough instructions on the hot roll mix to make the yeast dough.Allow the bread to rise in a warm location for the amount of time specified.Punch dough down and allow to rise for an additional 5 minutes before rolling.

Brown the Sausage
While the dough is rising, brown the ground sausage.Drain sausage in strainer to remove grease. Leave in strainer until ready to add to the bread roll.

Roll the Dough
Sprinkle flour on the countertop or pastry cloth.Roll dough into a 9-inch by 13-inch rectangle.Loosen the dough from the surface before adding filling.

Add the Filling
Starting at the center of the dough rectangle, spread sausage over bread.Stop one inch from each edge.Spread grated cheese over sausage.

Roll the Dough
Beginning with the long side of the dough, roll the bread, jelly-roll style, over itself, enclosing the sausage and cheese as you go.Gently fold in the ends similar to wrapping a burrito so the sausage does not fall out.Roll the bread about an inch at a time, enclosing the filling into the dough. Be sure the meat is not just moving away from the dough. Having the filling stay inside of each roll gives the cooked bread an evenly filled appearance when sliced.When nearing the other side of the rectangle, lift the empty inch of dough to the sausage roll and pinch into the bread to seal.Place the sausage roll seam side down on a cookie sheet sprayed with non-stick spray.

Bake and Serve
Bake the sausage roll for 30 minutes.As every oven bakes differently, use the time as a guide. If your oven cooks hotter than average, check the bread at the 20 minute mark. The baked product should be a golden brown bread firm to touch.Remove from oven and brush with melted butter if desired.Let stand for 10 minutes before slicing into 1-inch thick pieces.
Tip
Choose either mild or hot ground sausage.Other types of cheese can be used in place of cheddar.Use a small amount of flour on your hands to keep the dough from sticking to you.Check the water temperature with a thermometer. Water which is to hot can kill the yeast.
