Ingredients

Serves 8
15.5 oz each 2 cans diced canned tomatoes with liquid
15.5 oz each 2 cans black beans, drained and washed
15.5 oz each 2 cans spicey red kidney beans
15.5 oz 1 can corn, drained and rinsed
15.5 oz 1 can white (cannelini) beans
1 cup Fresh celery, diced
1 cup Fresh sweet peppers, diced
1 cup Fresh red onion, diced
1/4 cup Fresh garlic, diced
1 teaspoon Chili powder
1 teaspoon Paprika
1/4 teaspoon Celery seed
1/4 teaspoon Salt
1 cup Water
2 cups Pumpkin puree, fresh or canned

Directions for Savory Pumpkin Chili

Saute diced veggies.
After all of the veggies are tender, add these to the chili mixture.

Add spices and seasoning.
All seasoning may be added to chili mixture after the first hour. Stir thoroughly after adding each one.

Water should be added as needed.
One cup of water is added as needed. Different brands of tomatoes and beans may have different amounts of liquid, so the requirements could vary and your chili may need more water.

Add pumpkin last.
Add the pumpkin during the last hour after all other ingredients are well mixed.
Tip
Add cooked meat or your choice of spices to this simple recipe to satisfy your preferences.

    Haven't tried it yet, but sounds great! I read the article about arsenic in apple juice. I've been reading about apricot kernels and how they're poisonous, yet many people think they are valuable to health. I'm interested in knowing more about arsenic in apricot pits. Let me know if you do an article. :)
