Ingredients

Serves 4
1 lb red potatoes
1 large yellow onion
6 scallions
8 garlic cloves
2 tbsp rosemary powder
2 tbsp thyme powder
2 tbsp sage powder
1 tbsp cumin powder
1 tbsp sea salt
1 tbsp black pepper
4 tbsp olive oil

Directions for Savory Roasted Red Potatoes

Dice Red Potatoes Into 2" Chunks
Leave skins on.

Parboil Potatoes for 10 Minutes
Don't overcook potatoes. Potatoes should be partially cooked and just barely tender

Dice Onion, Scallion and Garlic and Saute in Olive Oil
Cut garlic cloves into thin slices. Saute until garlic turns light brown and onions are transparent. Don't over cook or garlic will taste bitter.

Mix Seasonings
Combine rosemary, thyme, sage, cumin, pepper and sea salt

Toss Potatoes in Seasoning Mixture
Toss gently and transfer to oven-proof baking dish or pan

Bake in Pre-heated 350 Degree Oven For About 30 Minutes
Dish is done when potatoes turn a golden brown
