1 1/2 c. all purpose flour
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt
2 eggs
1 c. pumpkin puree
3/4 c. brown sugar
3 Tbs. vegetable oil
1/2 tsp. vanilla
1/2 c. chopped nuts (optional)

Preheat your oven to 350 degrees. Spray or oil your muffin tins or line them with cupcake papers.
In a large bowl, mix together the flour, baking powder, soda, and salt.
In that same bowl, add the eggs, pumpkin, sugar, oil, vanilla, and nuts (optional). Fill your muffin pan 2/3 full.
Bake at 350 for 25 minutes, or until the tops are browned.
Brush the muffins with butter and serve.
