Ingredients

Serves 4
4 lb round rump roast
15.5 oz. can dark red kidney beans
15.5 oz can navy beans
15.5 oz. can great northern beans
2 tbsp chili powder
1 tbsp garlic salt
1 cup diced onion
1/4 cup olive oil
15.5 oz can canned tomatoes

Directions for Scrumptious Chili Bean Roast

Preheat Oven
Preheat oven to 250 degrees F.

Prepare Beans
Empty cans of beans into a strainer and rinse thoroughly.

Prepare Round Rump Roast
Place round rump roast into center of a 9 x 10 baking pan. Make light cuts in the top of the round rump roast with a sharp steak knife. Sprinkle half the seasonings over the top of the rump roast.

Mix Ingredients
Mix the un-drained can of tomatoes, beans and onion with remaining seasoning and pour around the rump roast. Drizzle olive oil over the the round rump roast, beans and onion mixture.

Bake
Cover baking dish with tinfoil and bake at 250 degrees F for 2 hours. It's important to cook at a lower heat for a longer time frame to make sure beans are softened and the roast falls apart.
Tip
Use flavored canned tomatoes for increased flavor. Slice meat and serve with beans on the side or tear apart the roast and serve in a bowl.
