Hearty Oatmeal Apple Crisp and Peach Shortcake

There's nothing better than baking on a cool autumn day. Making delicious desserts with seasonal fruit is always a treat. Here in New England fresh peaches and apples are bountiful in early fall and they're wonderful to bake with. Here are a couple of our favorite fall dessert recipes for you to try.

Hearty Oatmeal Apple Crisp

1 cup brown sugar

1 cup oats

1 cup flour

½ cup butter, melted

½ cup sugar

2 teaspoons cinnamon

3 cups apples, peeled, cored and sliced

Preheat oven to 350 degrees. Grease an 8-inch baking pan. Combine brown sugar, oats, flour and butter until thick and crumbly. Place sliced apples in pan and sprinkle with sugar and cinnamon. Cover apples thoroughly with oat mixture. Bake for 40 to 45 minutes until golden brown.

Peach Shortcake

Biscuits

2 ½ cups flour

2-½ tsp baking powder

½ tsp salt

1 tbsp sugar

½ cup unsalted butter

¾ cup milk

2 large eggs

1 tbsp milk

Peaches

Approximately 2 lbs sliced peaches

¼ cup sugar

Whipped Cream

2 cups whipping cream

1 tsp vanilla extract

4 tbsp sugar

Peel and slice peaches and combine with sugar. Refrigerate. You can sprinkle with a little lemon juice to prevent discoloration if you want.

Preheat oven to 400 degrees. Combine flour, baking powder salt and sugar. Cut butter into slices and work into dry ingredients with fork or pastry cutter. Work butter in until well combined and crumbly. Add ¾ cup milk and 1 egg. Combine well. Mixture will be lumpy and moist.

Place dough on floured surface and knead several times adding a little flour if needed. Roll out dough to approximately ½ inch thick and cut biscuits with cookie cutter or top of small glass. Beat other egg with 1 tbsp milk and brush tops of biscuits. Bake 12-15 minutes or until lightly browned.

Make whipped cream while biscuits are baking. Beat cream, vanilla and sugar until stiff peaks form. Refrigerate immediately until ready to use.

Slice biscuits and top with peaches and whipped cream. Serve immediately. Enjoy!
