Broiled Clams on the Half Shell

4 dozen cherrystone clams
6 slice bacon
Worcestershire sauce

Wash clams. Shuck and discard top shell. Run knife under clam to free it from shell. Place clams in shell in baking pan. Dash a tiny bit of Worcestershire sauce on each clam and place a piece of bacon on each. Cook under broiler 4 minutes. Serves 4.

Easy Clam Stew

2 cans minced clams with juice
2 tablespoons butter
1 small onion, diced
1 teaspoon celery salt
1 teaspoon paprika
1 teaspoon Worcestershire sauce
½ teaspoon Tabasco sauce
3 cups milk
1 ½ cups clam juice or seafood broth or vegetable broth

Melt butter and sauté onions for 5 minutes. Add celery salt, paprika, and sauces. Pour in clam juice or broth and simmer 3 minutes. Add clams and milk, bring to a boil and remove from heat. Serve with oyster crackers or saltines. Serves 4-5.

Greek-Style Clam Chowder

Buy inexpensive New England Clam Chowder at the store (not condensed, a brand like Progresso or something similar) and add your own ingredients to make it Greek. Your guest will think you're a gourmet chef!

2 cans New England Clam Chowder
1 tablespoon oil
½ cup red bell pepper, chopped
1 cup mushrooms, sliced
½ cup chopped onion
1 can artichoke hearts, drained
½ cup water
½ teaspoon seafood seasoning
½ teaspoon black pepper

Cook onion and bell pepper in oil for a few minutes until tender. Add all remaining ingredients and stir gently to blend. Simmer covered over medium heat 30 minutes, stirring occasionally (don't boil). Serve with oyster crackers. Great topped with shredded cheddar cheese. Makes about 6 servings.
