"Sehr-Gut" German Potato Salad

Best Recipe for Homemade German Potato Salad

Warm German potato salad is a sweet and sour favorite.

Sehr-Gut Potato Salad

6 slices bacon, diced (substitute ham or turkey bacon)
1/2 cup finely chopped celery
1 Tablespoons flour
1 1/2 Tablespoon sugar
1 teaspoon salt (optional)
1 teaspoon fresh dill weed
(OR 1/2 teaspoon dried dill weed)
2/3 cup water
1/3 cup tarragon vinegar
4 cups sliced, cooked potatoes
1 1/2 cups steamed fresh peas
(OR 1 small can of sweet peas, drained, or 1 1/2 cups frozen peas, cooked)
2 hard boiled eggs

Fry bacon in large skillet until almost crisp. Add celery and saute until bacon is crisp. If using regular bacon, drain off fat; if using ham or turkey bacon, you may need to add a little olive oil.

Stir in flour, sugar, salt, and dill weed. Gradually stir in water and vinegar. Cook over medium heat, stirring constantly until thickened. Add potatoes and heat through. Add warm peas and stir together.

Garnish with egg wedges.
Serve warm.
