Seniors Recall Great School Lunches!

School Lunches Used to Be Healthy, Delicious and Filling. It has been many years since I went to high school. There are many things that I forget about that time in my life. I forget the names of some of my friends and do not remember the names of any of the teachers. I remember the name of the Captain of the Baseball team because he and I had dated. I also recall the great High School school lunches.

This was about 50 years ago and I remember many of the outstanding parts of my teen years in high school. One memory in particular stood out, for no apparent reason, was my favorite lunch served in the school cafeteria. I recall that they had great school lunches.

I was thinking of this the other day. I had just come home from shopping and putting away the two cans of baked beans that had been sold as two for one. They also had a two for one sale on low fat, low calorie franks. I bought two and put one package into the freezer. As it turned out I ate some left over meatballs instead of eating the franks and beans

Today I looked in the refrigerator for something to eat for lunch. Out of the blue, I recalled the franks and beans that I bought yesterday. I also remembered the great school lunches they served during my high school years. Every Wednesday the school lunch special was franks and beans. It came with a slice of bread, sauerkraut and mustard. My mouth was watering as I took out the franks and beans from the refrigerator. I could hardly wait to have my lunch.

I took out a plastic bowl and put it on the counter. Then I sliced the franks into bite size slices and put it into the plastic bowI. I then topped it with the baked beans. Using a wooden spoon I stirred the contents lightly. I took some sauerkraut and placed iton top of the franks and beans in the bowl, and I lightly stirred it. I lifted the bowl with the franks, beans and the sauerkraut and put it into the microwave. I set the timer for two minutes.

Then I got a large plate and put about 3 Tbs of mustard on the side of the plate and next to it, along with 2 slices of rye bread. I waited until the microwave bell went off telling me that the food was ready to eat. Franks are not good when they overcook. They get shriveled, dry and salty.

Again I lightly stirred the cooked franks, the beans and the sauerkraut, and I dumped it onto the plate with the mustard and the bread on the side. I poured myself a glass of iced tea and sat down to eat my once favorite high school lunch.

It tasted delicious. Just as I had remembered. All the various flavors mixed together made this dish just as it had tasted when I was in Tilden High School in Brooklyn N.Y. It also is a well balanced meal and only cost pennies.

Next time, I am going to write about my next favorite dish that I ate in the lunch room in the high school I attended in the good old days when I was young and foolish.

    In grade school I could brown bag it,or go home for lunch.Wasn't till Jr.Hi you could buy your lunch,or bring it,but you couldn't leave for lunch.

    We had the best lunches...our schools actually cooked from scratch. Go Mt. Diablo Unified School District circa 1955-1968!

    Our little country school had made-from scratch baked goods, real meat and potatoes, and fresh salads and homemade slaw. Parent input makes a difference! Plus it takes cooks who will do the work of cooking...that's a big part of the problem today.

    It's sad that our schools don't cook anymore. They just reheat. This generation is loosing a few things.

    Well done - I don't know about today but years back the lunches in NYC schools was inexpensive. The menus were on schedules by the day of the week - about half the time i brought lunch - I went to Thomas Edison in Queens Class of 68.

    My mother made my lunches, too. Fresh celery and carrots and a piece of fruit. The sandwich was either P&B or tuna :) cheers

    Most of the time my mother made me lunch. I especially remember the creamcheese and olive sandwiches....but when she did give us money for school lunch, I do remember loving the franks and beans as well. Brings back good memories!

    I was never allowed to buy lunch. I ate peanut butter everyday for six years. UGH
