Serve Spicy Stuffed Peppers as Football Appetizers

Football season brings testosterone driven appetites, even in a room full of women. My favorite menu for a Sunday football is full of spicy Spanish food that satisfies the hungriest and the timid eaters alike. Everything can be prepared ahead of time so that you can enjoy the game along with crowd.

This menu is not for the calorie counting type. It is for fueling the rush that comes when cheering for your team and raging against the bad calls, while moaning when the wrong team scores.

Homemade stuffed peppers are the perfect football appetizers. These can be prepared ahead of time, and then slid into the oven during the pregame show and ready by the end of the first quarter.

8 Jalapeno peppers

8 oz Cream Cheese, softened

1 package Hidden Valley Ranch Buttermilk Dressing mix

12 oz Bacon

1) Preheat oven to 350 degrees.

2) Select jalapeno peppers that are firm and evenly colored. They should be between two and three inches long. Prepare the peppers for stuffing by slicing lengthwise and removing the seeds and membranes. For step by step directions on preparing the peppers, check out: Prepare the peppers.

3) Mix the cream cheese with the powdered ranch dressing. Fill the pepper halves with the cream cheese. Be sure to wear gloves when working with jalapeno peppers. Wrap each filled half with a slice of bacon. Secure with a toothpick, if necessary.

4) Place the stuffed peppers on a large cookie sheet. For easy clean-up, be sure to wrap the cookie sheet with aluminum foil.

5) Place the cookie sheet in the oven for 25 to 30 minutes until bacon is crisp and golden brown.

This recipe will serve four hungry people.

To finish out your menu for the football game, serve corn chips and salsa, enchilada casserole, Spanish rice, and warm tortillas. The jalapenos are the perfect football appetizer. They will satisfy the appetite until the half-time break to raid the kitchen for a hearty meal.

Best of all, the entire menu can be made ahead of time, so that you don't miss a minute of the action of the football game.
