Quick Easy Version of an Old Favorite

The standard version of Shepherd's Pie requires more work than I want to put into a winter's meal. My take on Shepherd's Pie is fast and easy to make. I also prefer hamburger to lamb.

Ingredients

Serves 8
2 lb hamburger
2 lb frozen mixed vegetables
16 oz can can tomatoes
1 small onion, chopped
2 tsp Italian seasoning
2 cloves garlic
1 tsp parsley
6 cups mashed potatoes (can use instant)
1 lb cheese (variety)
1 medium bell pepper, chopped
salt and pepper to taste
2 tsp chili powder

Brown Hamburger Meat
Drain hamburger well, then add chopped onion, garlic, bell pepper, Italian seasoning, chili powder, salt and pepper. Stir on low until vegetables are just starting to soften. Add frozen mixed vegetables and tomatoes. Cover and let simmer for 15 minutes.

Prepare Mashed Potatoes
Whether you use instant potatoes or prepare your own, it takes about 6 cups to give this dish great flavor. Potatoes should be stiff. I like to use chunkier potatoes, which is usually more of a favorite with the guys. Homemade potatoes only take about 15 minutes. I microwave them. It's much faster.

Put It Together
After the hamburger has simmered down some, pour the mixture into a large casserole dish or pan. I drain some of the juice off, if it overwhelms the vegetables. Too much juice will make the potatoes mushy.

Spread the mashed potatoes across top of the mixture. It's easiest to drop large spoonfuls onto the mixture and let it form a natural presentation.

I love to use different cheeses to top this dish. I use sharp cheddar and Monterrey Jack and use it generously.

Pop in the oven on 350 and let bake for about 25 min.

Make a salad and some type of your favorite bread to go with this excellent dish.

Tip
This dish is great to cook ahead of time and freeze. It is also great to save leftovers for lunches and leftover night. I am not a fan of lamb, so I choose hamburger for this wonderful winter dish.
