Ingredients
Puff dough - 300 grams
Potatoes - 4
Oil - 2 tablespoons
Corn starch - 3 tablespoons
Onion - medium sized
Garlic - 5 cloves
Spring onions - 20 grams
Red chilli (whole) - 5
Red chilli paste - 2 teaspoons
Soya sauce - 1 teaspoon
Sugar - ½ teaspoon
Vinegar - 1 tablespoon
Pepper powder - 1 teaspoon
Salt
Method
- Peel the potatoes. Wash and cut into 12 wedges.
- Soak the potatoes in water for 1 ½ hours. Par boil the potatoes. Drain and cool.
- Heat oil in a wok. Sprinkle the corn starch and some aji-no-moto on the potatoes. Deep fry till golden and cooked. Chop onions, garlic and spring onions.
- Heat 2 tablespoons of oil in a wok and stir fry the broken red chillies. Immediately add sliced onions, chopped garlic and pepper.
- Continue to stir. Stir the red chillie paste, soya sauce, sugar and salt into ¼ cup of water and add to the ingredients in the wok. Fry.
- Add the fried potatoes and toss.
- Stir in blended corn starch mix and continue to fry. Add vinegar.
- Sprinkle with chopped spring onions. Cool.
- Roll out the dough to 16 inches by 24 inches. Place the filling in the centre. Cut a herring bone shape with the dough and plait it.
- Bake at 200 C until done and golden brown. Serve hot.
Soya sauce has no saturated fat or cholesterol. It is high in iron, magnesium, niacin, phosphorus, riboflavin and vitamin B6. But it is also very high in sodium, which is why it is so salty and the quantity of sauce used should be limited.
