Vinegar cucumbers are sweet and tangy and can be ready to serve in a matter of hours. These cucumber appetizers are easy enough for novices in the kitchen to create. To prepare your cucumbers for this delicious appetizer you will need to peel the skin on the cucumber, leaving alternating rows of unpeeled sections, and cut into thin circular slices. If desired, you could cut the cucumber into half moons instead. Place the cucumbers into a plastic container and set aside to work on the marinade.
To create the marinade for your vinegar cucumbers you will need ΒΌ cup of vinegar and 1 tablespoon of sugar per cucumber. You can directly pour the vinegar and sugar over the sliced cucumbers and stir to combine ingredients and to fully cover your cucumbers. (You could also just place the lid on your container and shake to combine ingredients.) Place the lid on your plastic container and store the vinegar cucumbers in the fridge for 2-3 hours.
Tips: You can slice the cucumbers paper thin by using a food slicer. The thinner you slice your cucumbers the better they will hold the flavor of the marinade. You may also add sliced onions, red onions preferred, to the vinegar cucumbers for a delicious twist. Rice vinegar is less intense than traditional vinegar and may be a great option for those who do not like a strong vinegar taste. Apple cider vinegar makes a great vinegar option for your cucumbers as well.
