Simple, Cheap Dishes that Can Go with the Atkins Diet

The Atkins Diet took the country by storm a few years ago because of the outstanding results that dieters were getting. Even today, many people still incorporate some principles in the Atkins diet to their everyday lives in order maintain weight and not ingest too many calories with starchy carbohydrates and sugar. The basis of the Atkins diet is to consume mostly vegetables and proteins in the form of meats, beans and green leafy vegetables.

A simple Atkins dish to prepare is roasted chicken. Preheat your oven to 400 degrees. Take 1 or 2 lbs. of your favorite chicken parts and season with herbs de province, salt and pepper. Lay the chicken parts in a casserole dish. After the oven has preheated, turn it down to 375 and cook the chicken for about one hour/pound. There is no need to add any oil to this dish. Your chicken cooks in it's own juices and comes out moist and flavorful. Chicken will be golden brown and crispy on the outside when done.

Another simple Atkins dish is to prepare a rump roast or chuck roast. When selecting your meat, be sure to try and select a meat that is very lean. Preheat the oven to 350 degrees. Simply season the roast to your liking. Basic salt and pepper and bay leaves are sufficient. Then place the roast in a casserole dish. Put broth like Swanson's in the dish as high as it will go. Place the roast in the oven. The roast must cook for a few hours. The larger the roast the more hours you need to cook it. Simply check the roast every hour or so to make sure that all the broth doesn't cook off. When the broth starts to cook away, replace with water.

Midway through the cooking you may also want to re-season the roast. You should flip the roast every hour. The roast is done when you stick a fork into it and the meat flakes and is very soft.

Lean turkey patties are an Atkins favorite. Turkey meat is usually very lean and low in calories. It is a great meat to eat while on a diet. Buy ground turkey from the grocery store. Try to get the leanest meat there again. Mix the ground turkey with shredded carrots and chopped onions. Break an egg and scramble with water. Add enough egg so that the turkey patty sticks together. Saute the patty in sauce pan with a little light cooking oil. Serve over shredded carrots.

Shredded carrots are great drizzled with a little oil and vinegar. These are all great and enjoyable; Atkins dishes that use very little extra oil and add no excess carbs or sugar. Enjoy.
