Simple Cookies for Homemade Cookie Day!

October 1st is my favorite holiday. For those who aren't in the know, it is Homemade Cookie Day! It is a day to celebrate eating goodies, and acting like a kid again. It means spending time with the kids in the kitchen.

Making cookies does not have to be hard. You don't have to be great at baking, and it doesn't have to take a long time. You can use premade cookie dough with some extra goodies thrown in to make fabulous treats that look, smell, and taste homemade.

S'more Cookies
Spread one package of premade chocolate chip cookie dough (or use your favorite homemade dough!) into a 9 x 13 baking pan. Crumble 4 graham crackers over the top of the cookie dough and bake until the dough is cooked, normally 15 to 20 minutes, depending on the recipe. Remove the cookies from the oven and sprinkle miniature marshmallows over the top of the graham crackers. Return to the oven for a few minutes allowing the marshmallows to puff up until double in size. In a small bowl melt ½ cup chocolate chips with 1 tablespoon of butter and place into a sandwich size plastic bag. When the marshmallows have puffed remove the cookies from the oven. Snip the corner of the bag holding the melted chocolate and drizzle the chocolate over the marshmallows. Cut into bars and enjoy!

Cereal Cookies
Allow one package of premade sugar cookie dough to warm up to room temperature. Mix in 1 cup of a fruity cereal; crushed Fruit Loops, Fruity Pebbles, or even Chocolate Pebbles work well. Roll the mixture into one inch balls. Roll the balls in even more crushed cereal. Bake the cookies for 8 to 10 minutes; or until done.

Candy Cookies
Use one package of premade sugar cookie dough and a large bag of your favorite candies (Mini Reece's Peanut Butter Cups, Hershey's Kisses, Mini candy bars work well). Pinch off a 1 inch ball of dough and place inside a mini muffin pan. Bake until done, usually 8 minutes. As soon as the cookies come out of the oven press the candy into the center of each one. Allow to cool, and remove from the muffin pan.

You can modify these recipes to fit the needs of your family. There is no wrong way to make a cookie! Substitute you favorite flavors and candies!
