Here are some great tips for making cooking and enjoyable, if you have to cook for a large number of a crowd.
1.) Roast beef dinners are a frequent family treat, especially for Sunday dinner. It goes in the crock pot the night before, topped with carrots, and cooked overnight. It is forgotten about until you start smelling it the next morning. The rest of the meal includes creamy mashed potatoes, gravy, some kind of corn, and a vegetable and/or jell-o. The mashed potatoes are made over night. Here is the recipe for overnight creamy mashed potatoes.
Mashed Potato Recipe
As many potatoes as are needed.
8 oz. cream cheese
1/4 c. butter
1/2 c. sour cream
Just mash them thoroughly and you have really yummy mashed potatoes. (There are also recipes available online that may be more accurate if you search in google.)
2.) After you have eaten one dinner from the roast., there are several ways of using it again. You can make it into a beef soup, as well as a casserole by dumping everything together, and adding cream of mushroom or chicken soup.
3.) If you really hate to cook, and want to have things in advanced to pull things out and just bake them, then you need to use the 30 day gourmet methodology. You may want to do this with a friend, because it will cut the time down, and take just a day to cook things, instead of two. The idea here is to cook things that will refrigerate well for a time. There are guidebooks from http://www.30daygourmet.com/. The one day might be an awful day, but if you're in a hurry, then it's wonderful just to pull it out from the freezer and cook it, just like that. Some ideas for this kind of food are lasagna, stromboli, shepherds pie, etc. Sloppy Joe meet would also be ideal.
Anyway, this are just some tips that I have picked up from watching my mom cook all these years. She has been able to use most every left over, and make it into a new a exciting dish. Sometimes they are really, really good, and an occasional some are not so great. However, if you don't wish to throw food away, I hope these are enough tips to help you finish up your food.
