Simple Sausage and Cheese Skillet Frittata

Super Quick Meal for Breakfast, Lunch, or Dinner

This is a very simple and quick way of making a frittata. The prep time takes only a couple of minutes and the cooking time is very quick as well.

The ingredients can be substituted to suit your taste (swap sautéed vegetables for the meat, change out the type of cheese, etc.).

Ingredients

  • 6 eggs
  • 1 lb bulk sausage
  • 1 small onion, chopped
  • ½ cup grated cheddar cheese
  • ¼ cup grated parmesan cheese
  • ¼ tsp salt
  • ¼ tsp pepper
  • Vegetable oil

Directions

Turn oven broiler on.

Beat 6 eggs in a bowl and set aside.

Thoroughly cook the sausage over medium-high heat until browned. Remove from pan and drain off any excess grease.

In the same pan, place onions and cook over medium heat until they soften. Add meat back to pan, sprinkle in salt and pepper and stir to mix ingredients evenly.

Take an oven-safe frying pan and thoroughly oil all sides and the bottom of the pan. Pour off any excess, but be sure the pan is well coated.

Place pan on burner over low-medium heat. Pour in eggs and allow to cook until the eggs just begin to bubble on the bottom.

Sprinkle on grated cheddar cheese and then spoon in meat and onion mixture. Remove from heat and place under broiler.

Allow to cook for approximately another 3-4 minutes under the broiler.

When the eggs are no longer wet and the mixture has pulled away from the sides of the pan, sprinkle the grated parmesan over the top and allow to remain under the broiler for 30-60 seconds more.

Remove from oven, cut into pie shaped wedges and serve.
