Simple and Savory Carolina Flounder Recipes

Coastal anglers are catching a lot of flounder right now. Flounder are a popular fish for anglers due to their reputation on the table. Flounder are a white, mild fish that fits into many quick and easy recipes.

Flounder lie on the bottom of the ocean floor and are often caught by drifting or casting live bait. As a food fish flounder are delicate and shouldn't be overcooked. Some folks prefer them to any other fish.

Easy and Tasty Baked Flounder

1 lb flounder fillets
6 strips bacon
1 medium onion, cut into rings
1 tablespoon seafood seasoning
olive oil
salt and pepper
shredded cheddar cheese
Parmesan cheese, a few tablespoons

Grease large shallow baking pan with olive oil. Salt and pepper flounder fillets to taste and lay fillets in pan in a layer. Cover fillets with strips of bacon. Place onion rings on top of bacon. Dash seafood seasoning on top of flounder fillets. Bake covered or uncovered at 400 degrees for one hour, or until bacon is done. Remover dish, top with cheeses and bake about 4 minutes more or until cheese is melted. Serves 3-4.

Sunset Beach Baked Flounder

2 lbs flounder fillets
1 small onion, chopped
6 tablespoons butter or margarine
2 tablespoons lemon juice
1/8 teaspoon thyme
dash parsley and salt

Preheat oven to 350 degrees. Melt butter and pour into shallow baking dish. Put fillets in butter, add lemon juice and thyme, and put onions around the side. Bake 20 minutes, add a dash of parsley and salt over top with 4 minutes left. Pour juices over fillets before serving. Serves 4-5.

Charleston Flounder in White Wine

1 lb flounder fillets
1/3 cup minced onion
½ cup fresh mushrooms, chopped
½ teaspoon curry powder
½ teaspoon paprika
½ teaspoon black pepper
½ cup white wine
dash salt

Preheat oven to 350 degrees. Arrange fillets in a greased baking dish. Mix wine, onion, mushrooms, and seasonings together and pour over fish. Bake for 25 minutes or until fish is done. Serves 2. Very good served with wild rice.

Baked Flounder Stuffed with Blue Crab

1 flounder, dressed, around 4 lbs before dressed
½ lb blue crab meat
½ package stuffing mix
4 strips bacon
lemon juice from ½ lemon
1 tablespoon paprika
olive oil

Cut a pocket on each side of the flounder. Mix together the stuffing, crab, and lemon juice. Stuff the pockets and lay the bacon across them. Sprinkle paprika over flounder. Bake in a well-oiled pan for 45-50 minutes at 400 degrees. Serves 5.

Flounder Au Gratin

2 lbs flounder fillets
½ small onion, chopped
3 tablespoons celery, chopped
3 tablespoons butter
2 tablespoons lemon juice
1 cup milk
½ cup grated cheddar cheese
dash salt and pepper
flour

Preheat oven to 450 degrees. Melt butter in stove top pan.

Place lemon juice and 1 tablespoon melted butter in shallow baking pan. Add fillets, and place onion, celery, and salt and pepper over top. Bake 10 minutes.

Meanwhile, in stove top pan add milk to melted butter. Heat on medium (not to boiling), then place on low heat and gradually stir in enough flour to thicken (to desired consistency). Add cheese and keep on heat until cheese is melted.

Pour cheese sauce over fish and bake an additional 12 to 15 minutes. Serves 4-5.
