Simple Skillet (Stove Top) Barbecue Chicken

Barbecue chicken is a favorite for many; however, preparing it can be both time consuming and difficult. Cleaning the grill, buying charcoal, marinating the meat and even building and maintaining a fire can be quite tedious. As a result, most can only enjoy this meal a few times per year. This is especially true for individuals living in colder climates.

This simple skillet (or stove top) barbecue chicken recipe can give you savory, moist and delicious barbecue chicken in minimal time. It is also ideal for individuals desiring to eat more healthy. To prepare a more healthy version of this dish, simply remove the outer skin and excess fat before preparing.

This recipe serves 2 to 4 people.

What You'll Need:

4 chicken breasts
olive or vegetable spray
1 cup of your favorite barbecue sauce
salt & pepper to taste (optional)
Cast iron skillet (preferable but not a must)
Large pot with cover
Large spoon

Preparation:

1. Clean chicken and place in large pot. Cover chicken with water and bring to a boil.
2. Reduce heat and continue to cook for about thirty minutes.
3. Spray skillet with an olive or vegetable oil.
4. Heat skillet to about 350 degrees.
5. Drain and move chicken to skillet.
6. Brown chicken on both sides.
7. Remove from heat and drain excess grease (if any).
8. Add barbecue sauce.
9. Return to stove and bring to a simmer. Use a large spoon to repeatedly stir and smother chicken with sauce. Add a little water if sauce is really thick. Season if desired. Remove when fully heated.

Variations to Recipe:

1. Top barbecue chicken with a slice of cheese (swiss, pepper jack or mozzarella work very well) at the end of preparation (turn heat off first). Cover to allow cheese to melt slightly.
2. Add onions to skillet after chicken has browned (and before adding barbecue sauce) to add to the flavor.
3. Serve over a bed of white, brown or multi-grain rice.

For a tasty southern meal, serve with collard greens, macaroni and cheese and cornbread. Other complimentary side dishes include garlic mashed potatoes, green beans, cole slaw, baked beans and pasta salad.
