Simple Taco Salad

This easy to make full meal salad works for any season. It is zesty, crunchy and filling. This will easily feed a family of four.

Ingredients
One and one half pounds ground beef or turkey.
One pound authentic Mexican style white corn tortilla chips or your favorite
1.25 ounce Taco Flavoring packet
8 to 12 ounce package of shredded cheddar cheese or shredded mixed cheeses
Lettuce, carrots, celery, radishes, cherry tomatoes or tomato wedges and any of your other favorite salad ingredients.
Baby carrots are particularly good and sweet for this recipe.
French or Catalina dressing recommended or dressing of choice.

Preparation - less than 20 minutes
Brown meat in skillet. While meat is cooking prepare salad ingredients in large bowl. Salad ingredients should be comfortable bite size, no large chunks of lettuce for instance. Top meat with taco seasoning and stir. Cover, reduce to low/warm heat to keep meat tender. Drain grease thoroughly. Open chip and cheese packages and set in serving area.

Plate and Serve
Layer as follows. Arrange 6 to 10 chips on dinner or paper plate. Top with salad vegetable ingredients of choice, spoon taco seasoned beef over vegetables and sprinkle about 1/4 cup of shredded cheese over hot meat to allow some melting. Pour serving of dressing over all. You can either eat with fork or lift salad top chipped to enjoy the crunchy goodness. If spices bother, the taco seasoning can be halved.
