Simple Zucchini Fry-Up

Zucchini, that ubiquitous summer vegetable! What can we do with the yearly overabundance? Here is one super-simple, easily modified recipe for a great summer side-dish.

Zucchini Fry-up

4 zucchinis, washed and sliced (for large zucchinis, first cut them lengthwise before slicing).
2 Tbls. olive oil
salt and pepper to taste.

Heat the olive oil in a large frying pan. Add zucchini, salt, and pepper, and stir fry over high heat until the slices soften and start to brown. Serve hot.

See how simple that was? Now to spice it up a little, a few options:

Super Veggie
Dice onions, green peppers, and garlic and add along with the zucchini.

Italian
Add diced onions, green peppers, garlic when cooking. Drizzle with 2 Tbls. Italian dressing and shake a little Parmesan cheese on at the end.

Asian-style stir fry
Fry zucchinis with thinly sliced onions, garlic, and use soy sauce instead of salt. Before removing from heat, sprinkle 1 tsp. brown sugar over all, and add a dash each of ginger and mustard powder. Heat through and serve with rice.
