Greek immigrant Nicholas Lambrinides, who got the chili recipe from his family, began the restaurant. The chili contains a "secret blend of spices" that makes it less spicy than most other types of chili. One of the spices is rumored to be cinnamon, but the secret is closely guarded.
The most famous dish is the 3-Way Chili. It consists of chili made from the secret recipe brought from Greece in the mid-20th century, piled atop a plate of spaghetti and smothered with finely shredded sharp cheddar cheese. It is served with a generous supply of oyster crackers to sop up any chili on the plate. The 3-Way can become a 4-Way by having onions or beans added to it, or a 5-Way with both onions and beans.
Coneys are another popular item. They include hot dogs, chili, cheese and mustard, and can be ordered with onions. They sound like the coneys available in other restaurants, but have that special Skyline Chili flavor that sets them apart.
Vegetarians are not forgotten by Skyline. Black bean burritos deluxe have a Skyline mixture of black beans and rice surrounded by a tortilla and topped with more black beans and rice, cheddar cheese, lettuce, tomato, olive and sour cream. Any ingredients can be left out by request, and burritos can be ordered with chili.
There are many varieties of salad, from garden to Greek to several that include chicken. Some of the salads can also be made into wraps. There are always fresh iceberg and romaine lettuce and fresh tomatoes.
Service at Skyline is prompt and friendly. It is also possible to place a to-go order or to go to a drive-up window, taking the chili home or to a relative or friend's house or a park to enjoy. Chili can be served on potatoes or in bowls instead of on spaghetti at Skyline, but the best way to enjoy Skyline Chili is the original 3-Way.

Ummm, cinnamon in chili - that would give it a different mouthfeel and taste and could take the edge off of some of the harder spices. I've never had this but it does sound yummy.
