Slow Cooker Beef Taco Stew...Tasty Tex-Mex Meal in a Bowl

After the cold weather we have been experiencing, what could be better than a nice thick Tex-Mex beef taco stew served on top of crushed corn chips, topped with Mexican shredded cheddar cheese, and all your favorite taco toppings. Slow cooker beef taco stew is easy to prepare in your slow cooker and is a complete meal in a bowl. You can vary the beans to your liking. Brown the meat, add the ingredients, cook it all together in your slow cooker. That's all you need to do. It takes about 1-2 hours cooked on high or 4 hours cooked on low. Slow cooker Beef taco stew can be eaten as lunch or supper, or enjoyed as a snack. Slow cooker beef taco stew is great for a Pot Luck or Super Bowl party.

Recipe:

Ingredients

1 1/2 pounds of ground beef

1 envelope taco seasoning

1 jar of Tex-Mex salsa

2 cans Rotel Mexican style stewed tomatoes with chilies

2 cans chili style beans, drained

1 can of whole kernel corn, drained

1 cup water

½ cup chopped onion

Crushed corn chips, such as plain Doritos

Tex Mex Style shredded cheddar cheese

*Brown ground beef in a fry pan, Drain off fat. Transfer browned beef into the slow cooker.

*Add taco seasoning, salsa, tomatoes, beans, corn and ½ cup of the water. Check to see that the stew does not get too thick and add more water if necessary.

*Cover and cook on High for 1 or 2 hours, or on Low setting for 4 hours.

*Serve over crushed corn chips and top with Shredded Mexican style shredded cheese and all your favorite toppings.

Suggested toppings....shredded lettuce, chopped fresh tomatoes, chopped scallions, jalapenos, sour cream and hot sauce
