Smoked Salmon "Mini-Pizzas" Recipe

3 oz smoked salmon
1/2 cup baby greens or fresh baby spinach
2 wonton or potsticker skin/wrapper
to taste mayonnaise (low-fat or light can be used)
to taste lemon juice
to taste salt

Season smoked salmon with lemon juice (about 1/8 tsp) and a pinch of salt. Set aside.

Put wonton wrappers on a baking sheet or glass pan lined with parchment paper and toast in toaster oven until golden brown and crispy. If the center looks uncooked, put back in toaster for a little bit longer, watching closely. You can also cook these in a frying pan. Just be sure to add some oil so they do not stick.

Take toasted wrappers from step 1 and put on a plate. Top each "pizza" base with 1/4 cup of the baby greens. Then lay about 1.5 oz of smoked salmon on top of the greens on each "pizza."

Top with mayonnaise or favorite sauce and serve.
Tip
If you do not have mayonnaise in a squeeze bottle, you can spread it lightly over the "pizza" bases before adding the baby greens in step 3. If you don't like mayonnaise, you can omit it or use whole grain mustard or another favorite sauce instead. These also make great appetizers and are perfect for parties!
