Soul Food Salmon Cakes

Here's a delicious salmon cake that easy to fix and delicious. It's an occassional change from baked and steamed salmon that's sure to please. This salmon cake was a hit at a high school cook-off. Your teens 'n' tweens will love it-and don't forget dad.

Ingredients

Serves 4
3 16-ounce cans pink sockeye salmon
2 medium eggs
1/2 cup flour or bread crumbs
1/2 cup onion coarsely chopped
1/2 cup green bell pepper (optional) for kids you may want to leave this out
1/4 teaspoon coarse ground black pepper
2 cups oil
Crystal or Frank's Louisianna hot sauce

Start
Open salmon, place in bowl and remove any bones, skin and brown flesh.

Sasonings
To the salmon add eggs, flour (or bread crumbs), onion, green bell pepper and black pepper.

Mix
Thoroughly, but gently, mix ingredients together.

Not a 1/4 burger
Form cakes into 1/4 pound patties. Cakes should hold together well: adjust egg and flour/breadcrumbs as needed.

Prep the oil
In fry pan, over medium heat, heat oil. Oil will be ready for cooking when one drop of water sizzles in pan.

Prime the oil with one patty
Place one patty in oil. Cover and cook over medium high heat about 8 minutes. Watch to make sure it is not browning too fast. You want the inside of the patty to get hot before the outside browns to completion. Turn. Cook second side without cover until done. Approximately 15 minutes total.

Check your test patty
Remove patty from oil. Drain on paper towel. Check for doneness.

Add the rest...
Add rest of patties, cover and cook over medium high heat about 10-12 minutes. Turn. Cook second side without cover until done. Approximately 19 minutes total. Depending on your stove, you may have to raise the heat just a tad. More meat in the pan lowers the overall temperature. Watch to make sure the outside is not cooking too fast. NOTE: Salmon from the can is pre-cooked, so you're basically heating the cakes. No danger exists here from "uncooked" meat.

Drain
Remove patties from oil. Drain on paper towel. Serve.

Garnish
Serve with hot sauce on sandwich bread.
