Soup to Die For: Skinny Soup

I am one of those people that believes soup is for anytime of the year. There is just nothing like homemade soup. The soup is called skinny for a reason. Here is the recipe for this easy to make soup:

Ingredients:

3 large onions (cut quartered)
3 medium green peppers (cut small)
9 stalks of celery cut into small pieces
1/2 head of cabbage
2 cans of tomatoes (1 crushed, 1 whole)
Frozen green beans (1/2 bag)
8 carrots cut round
1 can (13 1/4 oz.) College Inn Chicken Broth
4 cloves of garlic (1/2 tsp. a clove)
3 bay leaves
4 small zucchini
1 tsp. Italian seasoning

I was not joking when I said this was easy to make. All you have to do is put all of the ingredients in a large pot and cook until the vegetables are tender. Be sure the pot is covered while cooking. This meal is perfect for anytime of the year and it makes a good hearty meal for people who may be on a budget (e.g. college students). Oh yes, and it is very healthy. Enjoy!
