1 can red kidney beans - canned 8 - 12 oz
1 can black beans - canned 8 - 12 oz
1 can white or navy beans - canned 8 - 12 oz
1 can yellow corn kernels - canned - 8 - 12 oz
1 red onion - large - finely chopped
3 scallions - green tops only - finely chopped
3 tomatoes -medium seeded and finely chopped
1 cup cilantro leaves -fresh - finely chopped
6 garlic cloves - minced
3/4 cup olive oil
1/4 cup lime juice
2 tbsp coriander - ground
2 tbsp cumin - ground
2 tbsp garlic powder
1 tbsp chili powder
1 tsp black pepper
1 tsp salt
Directions for South Beach "Quickie" Bean Salsa

Rinse Canned Beans and Mix Corn, Scallions, Red Onions, Tomatoes, Garlic Cloves and Cilantro
Rinse canned beans and mix with corn in medium sized bowl. Add scallions, red onions, tomatoes, garlic cloves and cilantro. Toss gently as you would a salad.2
Mix Olive Oil, Lime Juice and Seasonings and Pour Over Beans
In a separate bowl, mix olive oil, lime juice, cumin, coriander, garlic powder, chili powder, salt and black pepper. Pour over bean mixture and serve. Refrigerate until ready to serve.- Grilled Fish Taco
