A Spicy Atkins Diet Breakfast

Man, I love to eat! But, like most people who love to eat, I struggle with keeping my weight in check. I haven't always worked out, but I do now. I lift weights pretty seriously, but I'm not a big cardio workout guy, partly because of serious ankle and knee issues. So watching what I eat is critical for me.

The Atkins diet has been a godsend for me. It works, as long as I do it. I'm always looking for good recipes and I have one I want to share with you.

South of the Border Omelet

It's no secret around our house how much I love Mexican food. I like it any time you want to serve it. Being on the Atkins diet requires, at least for me, something to keep it "spiced up" to keep me interested. This is one of the ways I do it.

Ingredients

4 Large Eggs

Cilantro (as much as you like)

Old El Paso Hot Taco Seasoning

Pickled Jalapenos

ΒΌ of a Medium Chopped Onion

Shredded Monterey Jack Cheese

Taco Bell Hot Taco Sauce (I get the packets from Taco Bell - LOL!)

Crack open those big beautiful eggs into a medium mixing bowl.

Add about a teaspoon of Old El Paso Hot Taco Seasoning

Add chopped onion

Add Jalapenos

Mix it all together, whipping up the eggs (add a little water and that helps fluff them up)

Put about 1/8 of a stick of real butter in a pan and melt it.

When the butter is melted and the pan surface is covered with it, add your mixture of eggs, seasoning, onions, and jalapenos.

Turn fire down to a little lower than medium heat. A good trick is to tilt the pan while holding the spatula against the side of your omelet and allow the liquid mixture to drain into the edge of the pan. Keep doing this to allow your omelet to cook evenly.

When the omelet begins to get into a more solid state you may flip it over. After you've flipped it over reduce your heat to the lowest possible setting. Allow the omelet to cook for about 45 seconds and then add your cheese to the top of the omelet and then fold it over. Apply some cheese to the top of the folded omelet and cover the pan while turning the heat completely off. Pull the pan off the burner and pour your coffee and get your Taco Bell sauce packets out and your cilantro.

About the time you've gotten your coffee poured and your cilantro out you should be able to remove your succulent South of the Border Omelet from your pan and put it on your plate. Your cheese should be melted just right. Once it is on your plate open your Taco Bell Taco Sauce packets and squirt generous amounts all over the omelet. Then add your cilantro, and you will behold a beautiful South of the Border Omelet ready to spice up your Atkins Diet morning.
