Ingredients:
Filling
5-6 cups fresh peaches, peeled and sliced
1 ¼ cup white sugar
¼ cup brown sugar
1 heaping tablespoon cornstarch
1 teaspoon fresh lemon juice
Dash of cinnamon
Dash of nutmeg
Topping
1 cup all purpose flour
1 tablespoon sugar
1 ½ teaspoon salt
1 ½ tablespoon baking powder
3 tablespoons of Crisco
½ cup whole milk
Directions:
1. Preheat oven to 400 degrees
2. For the filling: combine sugar, cornstarch, cinnamon, and nutmeg in a large mixing bowl.
3. Stir in peaches and mix well.
4. Place in a saucepan and cook over medium heat until thick and boiling. Make sure to stir constantly to avoid sticking,
5. Pour into a greased baking dish and place into the oven to keep warm.
6. Topping: In a large mixing bowl, combine flour, 1 tablespoon of sugar, baking powder, and salt. Mix.
7. Cut in the Crisco.
8. Mix in milk until it is dough-like and moistened.
9. Take mixture out of the oven and spoon topping mix until covered.
10. Bake until golden brown.
11. Serve with warm with vanilla ice cream.
*You can double the topping if you want more of the sweet biscuits.
Make sure to pick peaches that are soft, not mushy, and have a strong scent. Hard peaches will do, but the ones that are very ripe have the sweetest taste. You can find these at local produce stands or pick them right off a tree!
