Southern Thanksgiving Recipes - Sweet Potato Pie

Nothing quite says southern comfort food like sweet potato pie. I learned this recipe first from my grandma but I've tweaked it a little over the years. This will become your family's favorite, too.

Ingredients:

2 eggs

5 oz evaporated milk

2/4 cup sugar

3 Tbsp butter - melted

1-2 tsp finely shredded lemon peel

dash of nutmet and cinnamon

1 1/3 cups cooked mashed sweet potatoes (2-3 medium size ones)

1 pie crust

Directions:

Preheat over to 350 degrees F. Put pie crust in 9-inch pie plate.

Beat eggs with whisk. Add sugar, butter, evaporated milk, lemon peel, cinnamon and nutmeg - whisk well. Stir in mashed sweet potatoes. Pour into pie shell. Bake 30 minutes. Cover edges with foil to prevent burning. Bake another 20-30 minutes until set. You can insert a knife in the center and if it comes out clean you know it's done. Cool and then enjoy. Tastes great completely cooled down but I love it slightly warm with vanilla ice cream. Yum!

If there are any leftovers, you should put them in the refrigerator. You can use canned sweet potatoes. I prefer using fresh ones, though. They are easy to find this time of year since they are in season right now. The easy way to cook them is to steam them. I peel them and steam them on the stove for about 20 minutes. Then I mash them. The smaller you cut them, the faster they will cook.
