This is a very healthy appetizer or snack using Superfoods, which are foods that keep you healthy and can possibly help you to live longer. The Superfoods used in this appetizer or snack are soy, spinach, tomatoes and yogurt.
You can buy soy rice cakes or crackers at a supermarket that has a specialty or health section. Fresh spinach can be found in any market or farm stand, and non-fat Greek yogurt is now available at most stores that sell all types of yogurt.
Put a half a cup or cup, depending on how many people you are serving, of the yogurt into a bowl. Mix in 1 teaspoon of garlic powder, 1 tsp of Sea Salt, 1 tsp of ground black pepper. Mix well.
Place spinach in blender or Cuisinart to finely chop or grind the spinach - about 2 cups. Add spinach to the yogurt and mix. Set the bowl out with sliced tomatoes and soy rice cakes or crackers to dip. A nice white wine or a light red wine, such as Pinot Noir goes well with this dish.
