Spaghetti Pie

A Family Tradition

This is a family tradition that my family and I eat on Good Friday. However this came from my great grandmother who was from Italy, (Naples). She would make this dish because they could not eat meat on Friday and also is was a cheap dish. They did not have much money, so this satisfied everyone. This dish carried down through the ages and now I make it. My family loves it, and so do I.

This dish is hot from the black pepper. So when I was a kid I would have a glass of water near me when I ate this and would take a sip with every bite. Now it can't be hot enough for me. The more pepper the better I say.

1 lb. of spaghetti
1 doz. large eggs
2 tbs. coarse pepper
1/4 cup of spry
1 heaping handful of grated Parmesan cheese
1/4 cup of salt

Fill a pot with water and a 1/4 cup of salt, then add spaghetti. Bring to a boil. Do not make spaghetti to soft as this needs to cook in the oven, and the spaghetti will get to soft. When the spaghetti is cooked put in a colander and drain. Put spaghetti back in pot. Add spry and toss till melted completely. In a separate bowl mix together egg, cheese, pepper and add salt to taste. Beat egg mixture all together. Then pour egg mixture over spaghetti and toss. Make sure all spaghetti is mixed well into the egg mixture. You should be able to see the pepper when you mix it up. Pour spaghetti into a 9x13 greased pan.

Bake for 45 to 55 minutes. Until top gets brown. Check with a cake tester to see if it is cooked inside.

Cool and cut into squares.
