Spaghetti squash is a great way to stretch a buck for the holiday season while giving your family a healthy meal. This cheap inexpensive meal can be prepared and served for Thanksgiving or Christmas.

Ingredients

Serves 5
1 Bouillon vegetable cube
2 Cans tomatoes, stewed or diced
1 Spaghetti Squash
1 Onion, minced or diced
2 Tablespoons garlic, minced or chopped
1 Cup parmesan cheese, shredded
1 Cup mozzarella cheese, shredded
1 Salt and pepper to taste
1 Tablespoon basil, dried

Preheat oven to 325 degrees. Use cooking spray and spray a line over a baking sheet. Cut spaghetti squash into halves and place cut side down on baking sheet.

Bake spaghetti squash 30 minutes. Use a knife or tooth pick to test. If it comes out clean, it has finished cooking.

Spray a non-stick saucepan with cooking spray and place over medium heat. Saute minced or diced onion and garlic until brown. Remove from heat and set aside. Stir in 2 cans stewed or diced tomatoes, 1 bouillon vegetable cube, and 1 tablespoon dried basil, salt and pepper to taste. Replace over medium heat and cook an additional 15 minutes. The sauce will become a medium thickness. Once it does remove from heat.

Remove any squash strands and reserve the shells. Layer each spaghetti squash half with 1-tablespoon sauce. Adding a layer of squash strands and mozzarella cheese. Repeat layers as needed. When finished top with 1 cup parmesan cheese.

Bake 25 minutes or until cheese melts.
