Spicy Apple Pork Fillet

Delicious Dinner Party Main Course

Ingredients: (to serve 4)

2 large Pork Fillets

1 cup of stewed apple (strained) - or use strained canned pie apple

1 teaspoon cinnamon

½ cup sultanas

4 bacon rashers (rind removed)

2 tablespoons honey

White wine

Method:

Trim ends from port fillets and remove any sinew.

Make a slit in each port fillet but do not cut right through at bottom or ends.

Add cinnamon and sultanas to apple and mix well.

Insert the spicy apple mixture into the slit of each pork fillet.

Wrap 2 bacon rashers around each fillet.

Place in a greased, oblong oven-proof dish.

Drizzle with honey and pour a little white wine into the dish.

Bake in a pre-heated moderate oven for 30-40 minutes or until properly cooked.

During baking, baste periodically with pan juices and add more white wine if necessary.

Remove from oven and cover with foil. Rest the pork for 10 minutes after cooking.

Halve the port fillets and serve with steamed carrots and green beans. Drizzle any remaining pan juices over the pork.

Alternatively, slice the pork fillets diagonally and arrange on a serving dish surrounded by carrots and beans.

Can be served cold with your favorite salads.
