Spicy Baby Bests Menu to Cancel Out Sugar Overload for Easter Dinner

Easter is a traditional family meal that seeks to quiet the bunny jumping sugar overload your children get with their Easter Basket. Although there are many alternatives to candy gifts in an Easter basket, chocolate and sugar will make their presence known or beware unhappiness. What better way to acknowledge the first births of the season, the last preserves of winter and the gift of religious new life promised by the resurrection of Jesus than a family Easter Dinner which showcases all?

Fresh Easter Bread Rolls for Easter Dinner

This recipe uses a bread maker to produce the finest Easter Bread rolls for Easter dinner. Easter bread is known by its yellow color, flakiness and sweetness provided by anise flavor.

Melt 1/2 cup butter in 1 cup milk with 1 tsp of anise seed or fennel seed and let cool to 100F. Whip in three whole eggs until well mixed - I do this with a fork but a mixer will work, just beware splashing everywhere. Pour into a bread maker.

Add four cups of flour to the Easter Bread rolls milk, egg and butter mixture.

Dig a well into the top of the flour and add 2 tablespoons honey, ½ teaspoon salt, 3 tablespoons dry yeast.

Set the bread maker to mix and remove after the Easter bread has risen once. Roll the Easter Bread flat, butter the top of the surface and knead by hand until the butter mixes in. Repeat twice. Form the Easter bread into a long roll and cut into twelve to fifteen Easter Bread rolls. Set the Easter Bread rolls into buttered muffin tins and let rise. Bake the Easter Bread rolls 20-40 minutes in a 350F oven until browned lightly.

Minor Easter Dinner Roll Variation: wrap a palm-sized piece of the bread mix around a sausage and bake at 450F for baby Easter pigs in a blanket.

Baby Greens Spring Salad for Easter Dinner

Buy baby greens either in a bag mix or from specialty greens section of the grocery for a light spring salad sure to delight. Tear bits of leafy lettuce to the baby greens to make a salad large enough for your Easter dinner guests. Sprinkle alfalfa sprouts on top. Grate one or two carrots and add. Chop mint finely and add to the baby greens spring salad. Slice cucumbers thinly. Toss all of the ingredients well for a tasty Easter dinner salad.

Homegrown Specialty's to Add to Baby Greens Spring Salad

Tear off 1-2 inch leaves off of nasturtium plants which have a peppery taste and sprigs of finely chopped parsley, and add.

Spicy Vinaigrette with a Peppery Bite for the Baby Greens Spring Salad for Easter Dinner

Mix diced red pepper, ½ c vinegar, ¼ c water, 1 tablespoon sugar. Let sit for several hours or overnight and then toss the baby greens spring salad with a light amount of vinaigrette.

Spicy Egg Smashers for Easter Dinner

Fry bacon and create ¼ c bacon crumbles.

Peel leftover Easter eggs and chop into fine ¼ inch or smaller bits with a pastry blender.

Mix the bacon, chopped Easter eggs, 1 tablespoon of vinegar and ¼ teaspoon of paprika per cup of dry mix to make Egg Smashers for Easter Dinner.

Steamed New Potatoes, Baby Carrot and Baby Fennel Shoots for Easter Dinner

Dig up or buy 1 inched sized baby red potatoes, similar-sized carrots and steam them until cooked. If you can buy or grow fennel, steam 1-2 inch pieces of the fresh growth for a spicy minor vegetable.

Peppered Ham for Easter Dinner

Select and bake at 350F a ham for your Easter dinner.

Spicy Peppery Raisin Cherry Pecan Maple sauce for your Easter Baked Ham

Chop canned, pitted cherries into quarters. Smash 2 Tablespoons peppercorn finely. Chop ½ cup pecans finely. Add the crushed peppercorn, pecans and cherries to 1 cup maple syrup, ½ teaspoon cloves, 1 teaspoon cinnamon, ¼ cup of raisins and heat in a double boiler until hot. Serve like a gravy for your ham for your Easter dinner.

With enough taste treats to please the pickiest eater, this Easter dinner menu will serve up lots of fresh
baby vegetables and your last preserves to delight the entire family.
