Spinach- 1lb
Onions- ½ (sliced)
Garlic- 1 clove (crushed)
Nutmeg (grated)
Salt
Pepper
Blue Cheese- 2oz
Puff Pastry- enough to cover pies
Slice the onions finely, and lightly fry with the crushed garlic. Add a little salt and pepper, add the spinach and cook gently (do not overcook). Add a little grated nutmeg to taste.
Place ½ the mixture into the pie dish, sprinkle ½ of the cheese on top of this then add the remaining spinach. Add the rest of the cheese on top of this and finish by placing the pastry on top, eggwash the pastry and place into the center of the preheated oven at 350F.
Bake for 15-20 minutes, or until the desired color is achieved.
A tasty alternative to this is to make a cheese sauce with the blue cheese and make it in layers, spinach/cheese, spinach/cheese.
