Irish Coffee and Irish Soda Bread

St. Patrick's Day is a celebration that the whole family can enjoy. Here are a few recipes to enjoy throughout the day.

Irish Coffee Recipe
This recipe makes enough for one serving of Irish coffee. You can also make the recipe with iced coffee, for a delicious, chilled and refreshing St. Patrick's Day beverage.

If you are concerned with the amount of alcohol called for in this recipe, you can try substituting a few drops of brandy extract for a similar flavor. Although brandy extract does contain alcohol, you will only need a half teaspoon or so to flavor your coffee.

Ingredients for the Irish Coffee
1 cup hot coffee
3 teaspoons sugar
1 ounce Irish whiskey
Whipped cream

Instructions for the Irish Coffee
1. Pour the coffee into a large coffee mug
2. Stir in the sugar until it is dissolved
3. Stir in the whiskey
4. Top with whipped cream

Irish Soda Bread
A delicious way to start your St. Patrick's Day celebration is to enjoy a cup of coffee and a slice of toasted Irish soda bread. Leftover Irish soda bread can be toasted and served along with breakfast the day after St. Patrick's Day.

This bread can be used as an accompaniment to traditional St. Patrick's Day food such as corn beef and cabbage.

Sultana currants are made from miniature white grapes. If you can't find these golden colored currants, golden raisins, although larger, may be substituted.

Ingredients for the Irish Soda Bread
2 ½ cups all-purposed flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup sultana currants
¾ cup buttermilk
½ cup (4 tablespoons) melted butter
2 tablespoons molasses
1 egg

Directions for the Irish Soda Bread
1. Preheat you oven to 375° Fahrenheit.

2. Sift together the flour, baking powder, baking soda and salt into a large bowl.

3. Stir in the currants.

4. In another bowl add the buttermilk, melted butter, molasses and egg and stir well.

5. Stir the wet ingredients into the bowl of dry ingredients.

6. Form the dough into an oblong shape and place on an ungreased baking pan.

7. Using a serrated knife, cut a large X into the top of the dough.

8. Place the pan in the oven and bake for 45-50 minutes.

9. Let cool slightly before slicing.

    The Irish soda bread sounds interesting; if it has molasses, I know my hubby would like it! I'ver never had Irish coffee but it would be fun to try.
